Day 12, #30daysofGOODFOOD – Summer Brunch Salad

I didn’t actually make this dish yesterday but I came across it again while searching out recipes and know it’s one of my favorite things to serve at brunch. I’ve only attempted once, to lay them all out on a platter and make it look like a checkboard like this photo from Epicurious ;) usually I just toss in a bowl…but the mix of watermelon, tomato and avocado is to die for.  A perfect blend of savory yet refreshing on any spring or summer morning. Enjoy!

Tomato + Watermelon Summer Brunch Salad

Grocery List
4 small to medium heirloom tomatoes-in asst colors, cut into 3/4-inch chunks
1 small cucumber-peeled/seeded, cut into 3/4-inch cubes
1 cup 3/4-inch-cubed yellow or red seedless watermelon
1 avocado, cut into 3/4-inch cubes
1 TBS chopped mixed fresh basil + chives
1/4 tsp coriander powder
3 TBS extra virgin olive oil
3 TBS aged balsamic vinegar
S+P

In a bowl, combine the tomatoes, cucumber, watermelon, avocado, and herbs. Add the coriander and toss gently.

In a small bowl, whisk together the olive oil, balsamic vinegar, and S+P to taste. Pour over the tomato mixture and toss to coat evenly. Voila!
