pork tenderloin smothered in onions + mustard


grocery list serves 4
2 12oz pork tenderloins cut into 2″ slices and pounded down to 1″ pieces
2TBS olive oil
1TBS unsalted butter
1 large yellow onion sliced thinly
1tsp flour
1TBS grainy mustard
1C chicken broth
1TBS dill (that’s what recipe calls for, I forgot to buy so scrambled thru spice drawer and used fennel instead-it was delicious)
Butter Noodles for serving (I served with olive oil fusilli)

S+P both sides of each piece of pork while butter melts in olive oil over moderate heat. Add pork cook until brown on both sides, about 4 minutes-only turning once. Remove pork & set aside on plate. Add onion cover and cook until softened, about 10 mins, stirring occasionally. Add mustard and flour, mix in. Add broth and bring to a boil, nestled pork pieces in onion sauce and cover, cook until pork is cooked thru, about 10 minutes, flipping pork as needed. Boil water and cook noodles as indicated on box. Add fennel/dill to pork and serve immediately with noodles.
