easy peasy dairy free dessert!

so, while my fam was out two weekends ago for my babe shower, i stumbled upon this awesome dairy-free easy dessert that normally can be made with stuff you already have at home!

martha stewart’s lemon custard cakes

grocery list (aka find in your cupboard list)

unsalted butter, room temp for cups
3 eggs, separated
1/2 C sugar
2 tbs flour
zest from 1 lemon
1/4 C lemon juice
1 C almond milk
1/4 tsp salt
powder sugar, for dusting

pre-heat oven to 350, boil a pot of water. separate eggs into two bowls. in a large bowl – place the egg yolks, in a small bowl, please the egg whites. whisk your yolks + sugar together, until light. add in lemon juice, then milk, then zest. in other bowl, beat egg whites + salt until they can form soft peaks. gently fold whites into lemon mixture – batter will be pretty liquidy. evenly distribute into buttered cups making sure to get both liquid and the fluffy part. place cups into a glass baking dish and fill with boiling water until water line reaches 1/2 way up cups. bake for 25 mins, until golden on the top but still custardy on the bottom. dust w/ powder sugar and allow to cool slightly and firm up a bit. serve either warm or room-temp.
