easy, delicious, summer scallop dinner

last night i made john scallops – because there are some big changes going on at damiano inc and :) well, my man loves scallops.

i found this recipe in a best of food & wine cookbook i got from some amex deal, ha…but it was actually really really tasty and super easy! it only takes 1 prep plate, and 1 pan (+ cutting board) and about 30 mins. limited ingredients and literally i was ready to lick my plate clean. :)


Sea Scallops alla Caprese
(serves 4)   —- cost: $12~ish/per person

GROCERY LIST:
-2 lbs mixed heirloom tomatoes (they actually didn’t have any at whole foods, so i just used normal tomatoes, a couple kumatos & a yellow tomato for color)
-fresh basil leaves
-1 large red onion – cut into 1-inch-thick slices & skewered to keep the slices together (use either a metal or wet bamboo skewer)
-S+P
-5 tablespoons good olive oil
-12 giant diver scallops (about 2 ounces each or u-10 or u-20 size)
-coarse sea salt
-1 lemon, cut in half

Preheat your cooktop to hot and place a dry cast iron skillet (12″) – allow to heat up until it is very hot and slightly smoking.

Slice your tomatoes creatively (leaving small ones whole or halved) and lay out on a platter. Top with torn basil leaves. Set aside.

Season your onion slices (with 1 large onion I got 2 good 1″ slices) on both sides w/ S+P. Place them in the hot dry cast iron skillet and cook, unmoved, for 7 to 10 minutes, until well charred on the first side. Using tongs, carefully turn the slices over & cook for another 7-10 minutes, until well charred and softened. Transfer to a plate & let cool slightly, remove the skewers & separate the slices into smaller rings. Break/cut/tear into 1-2″ wide pieces and scatter them over the tomatoes. Drizzle the whole platter w/ 3 tablespoons olive oil.

While the onions are charring, score one side of the scallops in a checkerboard pattern about 1/4″ deep. Season w/ S+P all over and set on prep plate. Drizzle w/ 2 tablespoons olive oil making sure all sides are coated.

Place the scallops scored side down in the cast iron skillet (should still be hot and dry, feel free to ignore any charring left over from the onions) and cook for 5-7 minutes, unmoved, until almost cooked-they should be opaque almost all the way through. Flip them over and sear the other side for 30 seconds-1 minute. Remove and arrange on top of tomato salad.

Sprinkle the scallops & tomatoes w/ coarse sea salt and squeeze the lemon halves over – serve.

…and i don’t love onions or even scallops, immensely anyways, but seriously – this was amazing. the perfect easy summer dinner. serve w/ a saffron rice or arugula salad (ok, maybe that’s just us since it’s our go to “serve with”… ;) ha)

*this can get a little smoky, so make sure to use a hood vent, can also be cooked outside on the grill on a piastra or even in your cast iron skillet…

lemonheart.

so. for those who may be new to my little blog… lemonheart was my creative baby. my outlet to making and doing and being…i decided to start it with handmade jewelry, which would grow to other accessories & paper goods, then to jewelry holders to other furniture pieces and then to any and everything my little heart could imagine. …ha-well before my dreams could take flight…i put my baby on hold ;) and instead – i grabbed myself a partner ;) and we started peekay – my BIGGER creative baby. with finding 2 weddings from the start; it easily pushed my other little dream lemonheart to the side and took over all my creative energy and spare time.  needless to say i’ve been extremely lacking on all things lemonheart since then and basically told myself that i’d put it 100% to the side during these two weddings and restart it up this summer… (new pieces, stocking up my inventory, and finally really putting together my website)

…so with our second wedding next friday – be on the look out for lemonheart updates and a relaunch of the site to come late summer!
…and well ;) while i’m personally on a handmade goods vacation ~ i’ve been searching out gems on etsy and wanted to share some of my favs

LOVE THIS…the fact it says “i am yours” literally melts my heart, I might have to make my own stylee that says “i am theirs” for my man and my babe to come ;) ha or more realistically just request a custom one from tinahdee. heheh

of course i had to throw something babe in there, these wooden rattles are just too sweet to me, the natural materials the fact they could double as a teether, and then to top it off that they come from the pacific northwest? i’m definitely hoping to find one or two of these in my baby’s room coming up!

since moving into de la sol, this is the first time i’ve officially had a garden and i can’t wait to be out there cultivating and growing my lunch! these vintage spoon markers would make it that much better–don’t you think?

now i’ve never sewn, so attempting to make something like this could never be on my list- but the thought of re-useable snack bags has been super appealing to me for the past year or so. after searching out a few of the options out there, this brand seems to be high quality and come in cute prints!

i could spend hours and hours on etsy searching out all things lovely, finding inspirations for things i want to try to make myself and finding perfect gifts for friends :) what are some of your favorites out there?

i blame it on the preggo brain

gosh i feel a little horrible! i’m getting lots of (albeit excited) texts, emails and messages from friends who are surprised I hadn’t told them I had a babe in my belly sooner….

I’m sorry!!!

I swear I thought the news was fairly widely spread out there, and there’s def a few of you I SWORE we had already even shared in jumps, screams, squeals, and giggles over it (whether in person, over an email or the phone)…but alas – I’m either crazy, having very vivid preggo dreams, or just a simple case of preggo brain.

All my love to all my friends. Near + far. And THANK YOU for all the words of encouragement, advice, support and well wishes :) xoxo!

here’s from our first ultrasound from 4.26.10. of course, it’s now since more than doubled in size :)

…more deets – we’re NOT finding out the sex. i’m officially due 12/4/10. we’re looking into either a home birth or giving birth at the mountain midwifery center. we have both a boy + a girl name already picked out. (but truly, i kind of don’t care if you like either one of them or not, ha because we do). and as of today, i’m officially 16 weeks + 3 days along. the verdict is still out on belly shots, but knowing me- i’ll probably at least post some version of a quickie bathroom sesh weekly ;) xo-p

nursery inspiration

so now that the news is out there, i can flood (ok, ok i’ll keep it within moderation) my blog with all my babe finds!

now, i’ll be the first to admit, i am CRAZY LUCKY to have what i have as a starting point for the nursery. the room is a perfect size, the closet is already sectioned out into small spaces & cubbies and the room-even empty-feels incredible. the east and west wall wrap from the floor + ceiling in a whitewashed beetle kill, giving it this warm safe cozy feel. the south wall is mostly window which opens up to our green roof top balcony, which will only grow and get better. lucky, right!? ;) BUT that means i need to come up with a pretty sweet nursery to live up the potential of this space…since we’re keeping the sex a secret until the big day – i’ve decided on a native american themed nursery.

thoughts?!

i’m thinking the cow skin rug centered in the middle of the room, the teepee in the left corner, the crib in the right corner, the rocker near the closet, and then the land of nod single seaters (in red, blue, and green) for inside the teepee and then i’d love to create my own linocut orca whale print for the wall… :) & probably some variation of a dream catcher and colorful feathers for the mobile

…let me know what inspiration you guys might think could be rad for a gender neutral nursery too!

with bump…not chunk

so :) we’re having a little babe! he or she will join our family next december and we couldn’t be more thrilled! (ha just another thing to add to the craziness of moving, adjusting, trying to start a business, and now dealing with feeling crazy tired and throwing up – awesome.)  :)

yesterday i reached the 4 month mark and johnny+i made b-fast to celebrate his first pre-father’s day.

loving watercolors lately

so i’ve been slightly obsessing over soft, light, airy silks and anything in pretty watercolors…

sort of like these:

we have a wedding in mid-august in vermont and i was OH SO hoping I could wear this H&M Garden Collection Dress, but it was completely SOLD OUT across the board like a week after it landed in stores…so I’m on the hunt to replace it with something similar but better! (A full ground/ankle length version) If you see anything of know of any brands I should be checking out-let me know! Otherwise, I’m going to start soliciting any friends who can sew ;)
