mmmm – Chicken in white wine sauce w/ tarragon & green grapes


Jess’s mom is in town and we were lucky enough to have them over last night….so I made the tarragon grape chicken dish John and I love so much. It’s super easy, little prep (which means like hardly any prep ‘dishes’ to clean) and a unique taste that is amazing.

GROCERY LIST: serves 4
4 boneless, skinless chicken breasts

1/4 cup flour

1 1/2 tablespoon unsalted butter

1 1/2 tablespoon grapeseed oil (vegetable oil works too)

2 medium shallots, minced

1 tablespoon chopped fresh tarragon leaves

1/2 cup white wine

1 cup seedless green grapes, halved

1/2 cup chicken broth


1. generously season both sides of chicken breast with salt & pepper and dredge in flour, placed in a shallow dish. set aside.

2. heat butter and oil in 12″ skillet (cast iron works best, but if you don’t have one, use a NOT non-stick skillet), swirl to melt butter-once foam subsides and butter starts to brown – add chicken breasts “ugly side up”, reduce heat to medium-high and saute without moving until nicely browned (about 4 minutes depending on how big your chicken breats are). Turn chicken over and cook on the other side until meat feels firm when pressed, roughly another 3-4 minutes. when done, set aside on a plate tented with foil.

3. leaving all left-over residue in the pan, add shallots and saute over medium heat until softened (about 1 minute). add grapes, tarragon, and wine and bring to a boil, scrape up all brown bits left in the bottom of the skillet with a wooden spoon. cook until syrupy. (around 4-5 minutes)

4. add chicken stock, increase to a boil, stiring occassionally, until reduces down (about 4 minutes), add in chicken breasts and coat w/ shallots, grapes, and sauce…season to taste w/ salt & pepper, serve immediately.
