mini lobster rolls

our good friend jess was away at the cape this past weekend, and in honor of missing her dearly-we decided to make mini lobster rolls for lunch sunday.

grocery list:

  • ½ lb. cooked lobster (I buy the pre-cooked, frozen box from Whole Foods, it’s easier, already pre-packed at a ½ lb, and still taste good…a little on the expensive side though), chopped finely
  • ½ lb. cooked shrimp, chopped finely
  • ½ cup mayo
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped up 
  • 1 tsp chopped chives
  • 2 tsp lemon zest
  • Salt & pepper to taste

 Dinner rolls—I use a frozen french bread dinner roll

Mix all ingredients together, cover and chill in fridge until ready to use. I go a little heavy on the salt and pepper and on the lemon zest & barely over on the dill. I use the frozen dinner rolls because this should serve about 15 small dinner roll sandwiches, so by using frozen ones I can cook up 3 or 4 at a time and always have them warm and fresh. (pre-heat oven to 400, cook for 8-10mins) we also use on english muffins or in big hoagie style rolls-if looking to fill an empty stomach. John flavors his with sriracha sauce, adding a lettuce leaf also adds a nice crunch.

we enjoyed them with bbq chips & mint + honey green tea. yum! perfect for an light outdoor treat!
