good wife – good impression – good muffins!

so all the burton principal reps (territory managers, the guys who do the same thing john does but in different states) are in town…having a big meeting at john’s showroom today. most of them landed yesterday so john went out to meet them downtown….and while i was home with the gnar–i decided to be a good wife, by making a good impression and cooking some good muffins for the reps for breakfast this morning :)

 

They were vanilla pear and tasted fantastic!

preheat your oven to 350…

[dry]In a large bowl, mix:

2 cups flour

1/2 cup sugar

2 tsp ground cinnamon

1 tsp ground nutmeg

2 tsp  baking powder

1/2 tsp baking soda

1/2 tsp salt

[wet]In a medium bowl mix:

2 eggs

3/4 cup buttermilk

1/2 cup canola oil

1 tbsp vanilla extract

[guts]In a third bowl mix:

2 cups cut up ripe/but firm pears

1/2 cup chopped walnuts

[topping]and finally in a fourth bowl mix:

2 tbs sugar

2 tsp cinnamon powder

1 tbs finely chopped walnuts

-when you have all your bowls separated, and prepared…..mix the wet bowl (eggs, buttermilk, vanilla, oil) w/ your dry bowl (flour, sugar, cinnamon, nutmeg, baking powder/soda, salt) – stir with spoon until you no longer see any dry ingredients: but be careful NOT to overmix! fold in the guts-pears & walnuts from the bottom up and scoop with a spoon into pre-greased cupcake tin.  top with 4th small bowl (sugar, cinnamon, walnuts) to create a suggary crispy top layer to the muffins.

cook through at 350 until you can poke with a toothpick and it comes out clean: 20-30 mins depending on your stove.

*makes 12 medium sized muffins or 6 large muffins.

[lame, i forgot to take a picture-but i made two batches, which meant there were a 3 left over so john + i split one last night as a taster and he had another one this am for bfast]
